This recipe is inspired by the classic club cocktails—the Southside, Pegu Club, and Clover Club—and the iconic stories behind said cocktails. Having spent some time at North America’s oldest country club, located in Lawrence, New York, I was inspired by the heritage of the club and the heritage of Bombay.
Ingredients
2.5 ounces Bombay Sapphire
0.5 ounces simple syrup
0.5 ounces acidic solution
4 dashes lemon bitters
1 drop peppermint extract
Method
Add ingredients to a mixing glass, stir to chill, and strain into a chilled coup.
Garnish and serve.
