Each year at Whistler’s Cornucopia, executive chef James Walt, restaurant director Neil Henderson, wine director Samantha Rahn, and the Araxi team put on a dinner with great wines. They call it Big Guns, for a very good reason. Walt’s extraordinary food is paired, dish by dish, with exceptional wines. This year, you will find Northern Divine Caviar, Buffalo ricotta gnocchi, and Rangeland elk tenderloin, among the many tantalizing dishes.
Wines include: Pewsey Vale “The Contours” Museum Reserve Riesling 2006 (Eden Valley, Australia); M. Chapoutier “Chante Alouette” Hermitage Blanc 2011 (France); Louis Jadot “Les Avaux” Beaune 1er Cru 2005 (France); Fontodi “Flaccianello” 2009 (Tuscany, Italy). You get the idea. It is a celebration of what this restaurant practises every day, bringing great food and wine experiences to anyone who dines there.
