Just in time for Canada Day come these recipes for refreshing cocktails from two of Vancouver’s top steakhouses. The star of each show? Fresh summer strawberries.
Steve Schmietenknop, the director of bar and beverage programs at Hy’s Steakhouse & Cocktail Bar, brings us his tribute to our national anthem’s glowing hearts, while bar manager Taylor Smith adds minty garden freshness to Gotham’s Summer Social.
Combined with a blast of citrus and sweetness, the flicker of mint in the background makes an excellent summer cool-down cocktail, Smith says, and the rhubarb syrup offers a nice balance. Cheers!
Glowing Hearts
Hy’s Canada Day cocktail
4 fresh strawberries (3 muddled, 1 whole for garnish)
1.5 ounces Ketel One Botanical Peach & Orange Blossom vodka
0.5 ounce St-Germain elderflower liqueur
1 ounce apple juice
0.5 ounce fresh lime juice
0.5 ounce cane or simple syrup
Domain Chandon sparkling wine
Glassware
Collins glass (tall glass)
Method
Muddle three strawberries in a Boston shaker. Add all other ingredients over ice except sparkling wine. Hard shake to a count of 10. Strain over new-ice-filled Collins glass. Top with sparkling wine.
Garnish
1 whole leafed strawberry
Summer Social
Gotham’s Canada Day cocktail
3 fresh strawberries
3 fresh mint leaves
2 ounces Bombay Sapphire gin
1 ounce lemon juice
1 ounce rhubarb syrup
Soda water
Glassware
Coupe
Method
Muddle strawberries and mint in Boston shaker. Add all other ingredients over ice except soda water. Hard shake to a count of 10. Strain over new-ice filled coupe glass. Top with soda water.
Garnish
Fan made from 2 sprigs of mint.
